Kimmy's Cold Day Warm Heart Quilting Soup-YUM YUM
Kimmy shared this delicious soup recipe on my chatroom today and so now, you have two great new recipes for cold days...and you can clean out your freezer, cupboard and your vegetable drawer-I love this kind of recipe and it is always good!
"This is so easy and sooooo good" Kimmy says!
6-8 cups of beef broth ( I use the beef base that you add water too.)
a little cooked onion
frozen meatballs
frozen or canned veggies of your choice. I usually just use what I have in a
can or whatever is in the freezer.
can of beans or any short pasta
1 can diced tomatoes
about 2 tbs of tomato paste
some italian seasoning or basil
fresh parsley
parmesan cheese.
Basically cook the onion, add the broth, meatballs, add the veggies, beans or
pasta heat thru or until pasta is aldente, add the tomato paste, and italian
seasoning. Serve it up and
Sprinkle with parm cheese and parsley and dig in.
The whole thing comes together in about 30 minutes.
